Description
Mama Sita's Sweet & Sour Sauce Mix is an easy base for escabeche, the Filipino fried fish in a tangy-sweet sauce, and also makes a quick dipping sauce. It's made in the Philippines from cane sugar, tomato powder, cornstarch, salt, citric acid, paprika, ginger powder, and spices.
For escabeche, dissolve the pouch in 3/4 cup water. Fry about 400g of fish until crisp. Sauté ginger, garlic, onion, carrots, and bell pepper, pour in the sauce, and simmer for 2 minutes until thick before adding the fish. For a dipping sauce, simmer the mix with 3/4 cup pineapple juice or water and serve with lumpiang shanghai, fried shrimp, fish balls, or sweet and sour pork. Comes in a 2oz (57g) pouch, about 4 servings.
